Project Status: Prospective or Speculative.
When creating a new project you have the option to set its status to Active or Completed.
How about another option to set Prospective or Speculative projects so you can add and manage projects you are working on winning? This would allow you to see future work and possible income in the pipeline.

Within the next couple of releases you'll be able to create quotations/estimates which should take care of part of your request.
Further down the line we want to work on cash forecasts based on estimates and previously received income but that's further off -

Inappropriate?Estimates do provide a useful tool for tracking future work. I also have relationships with potential clients which are more vague than estimate, but I like to track when I last contacted them, keep notes about our discussions etc. I currently use a simple pipeline in an Excel sheet for this, a very cut-down version of tools like SalesForce.
I think FreeAgent's advantage is that it covers the full cycle of freelance work from customer acquisition to tax return. A lightweight sales pipeline built into FreeAgent would be a useful tool for me.
